Penne with Vodka Sauce


Last summer I visited the UK and Portsmouth, a very pleasant town on the Atlantic Ocean. Walking around we sat to eat at an Italian restaurant on the harbour and tried this recipe. Since then I think about preparing it very often, but never have enough time.  And now that the moment came, I browsed the net and found different versions, picked the one that seemed closest and I added some of my ideas. So I made this delicious pasta based on the internet recipes and my ideas.

My little daughter liked the pasta a lot.  When I shared with my friends that she liked the vodka sauce pasta, they responded strange and asked me how I can give a toddler meal when I used vodka for the sauce. Many people, when they hear that alcohol is used for a sauce imagine that children cannot eat it, but this is not the case, because as you will see - the alcohol evaporates completely and leaves only the scent of it. So the dish was very tasty and there are no restrictions on its consumption.

Serves: 4
250 g - penne (or other pasta)
400 gr - canned tomatoes (strained)
150 g - peas
200 ml. - Vodka
200 g - cream
1 - small onion finely chopped
oil - 60 g
6 cloves of garlic (sliced)
Salt, black pepper
2 tablespoons - Olive Oil
2 tsp - Sugar
Heat the olive oil in the wok pan over a medium heat, add the sliced garlic and fry until it becomes golden. Add the onion and cook until it becomes soft and transparent.
Add tomato sauce, vodka and sugar, and let it boil and simmer over low heat for about 10 minutes and stir periodically. The alcohol has to evaporate and leave only a delicate flavour. Once the alcohol has evaporated, add the cream, stir well and add the peas (if frozen boil it for 5 minutes if canned boiling is not needed).
Leave on the heat for about 5 minutes so as to blend the flavours.
Meanwhile heat 2 litres of water in saucepan and put 1 tablespoon salt when boiling add the pasta and cook according to package instructions. When the pasta is ready drain and add to the sauce in the wok pan. Stir it well for 3 to 4 minutes to mix everything.
Serve the pasta warm, Bon Appetit!
