Caesar salad

This is a landmark recipe has very interesting story that I will try to tell you more about. Creator of the salad is an Italian immigrant, his name is Caesar Cardini, he worked during the early 20th century in San Diego, USA and Tijuana, Mexico. It is claimed that the recipe dates back to 1924 and there are various rumors about how it occurred, and as the most popular recipes it was discovered accidentally. One version is that Caesar had only the products that are listed below left from the previous evening and he combined them to find this famous recipe.

With the time many versions of this salad appeared, and I will try to tell you more about them.
There are two options for making the dressing and they depend on whether you have fresh eggs and if you don’t then replace them with ready mayonnaise. If you are not sure how fresh the eggs are you risk to incur stomach problems or even risk to get sick from salmonella.

Ingredients
1 - salad
croutons

Dressing
1 - anushua
4 tablespoons - Olive oil (if you use mayonnaise) and 8 tablespoons if you use egg yolks
1 clove garlic
30g - freshly grated Parmesan cheese
1 teaspoon - Mustard
2 - egg yolks or 3 teaspoons - Mayonnaise
1 teaspoon - Worcester Sauce
40 ml - Lemon juice
Salt

Preparation
Wash and tear the lettuce and leave it aside to dry on household paper.For the dressing in a small ceramic cup mash the anchovies with lemon juice and Parmesan until you get a homogeneous mixture and anchovies is absorbed into the sauce.

Dressing Option 1
In a metal bowl, combine the egg yolks and olive oil and stir vigorously with a stirring rod until reaching a creamy mixture. Add mustard, sauce Worcester, the mixture of anchovies, lemon juice and Parmesan, stir the ingredients well so that you get the perfect dressing.

Dressing Option 2
Add the ready mayonnaise, mustard, sauce Worcester, mixture of anchovies, lemon juice and Parmesan, stir the ingredients well so that you get the perfect dressing.
In a wooden bowl, combine the salad and the dressing depending on which of the options you have chosen and croutons and sprinkle with grated Parmesan.Enjoy!
