Lettuce, Peas and Mint Soup


I'm a big fan of cream soups and I love to experiment in this direction, so I decided to try something new. I was not sure whether it's worth the effort. My little princess, which is only a year and a half old licked her fingers and her small mouth says "More" This was the best way to be sure if it was worth it.
The main elements are the peas and mint- an exclusive combination that provides freshness thanks to the mint. The lettuce might seem a strange addition to a soup but it fits very well with the other ingredients.
I'll give you an advice that is always valid - prepare all the products and spices in advance, so that you can focus on the cooking itself, rather than constantly looking for some products.

500 gr. - Frozen peas
200 gr. - lettuce, cut on big pieces
12 leaves - mint
1 - chopped onion
2 cloves - garlic, finely chopped
2 l. - water
100ml. - Cream
60 gr. - Oil
1 tablespoon - Lemon juice
100 gr - bacon (chopped for garnishing)
black pepper

Heat a saucepan and melt the butter over medium heat, add chopped onions and leave until the onions soften. Now is the time to add the lettuce and when the lettuce leaves are almost fried, add the peas, vegetable broth, mint, garlic and allow them to boil for about 10 minutes Remove them from heat and blend well with kitchen blender. After that add the cream and lemon juice and return to cook for about 5 min. Enjoy!
